Department of Public Safety and Correctional Services - DPSCS CORRECTIONAL DIETARY OFFICER TRAINEE Cooking in Hagerstown, Maryland

Duties:

A Correctional Dietary Officer Trainee Cooking is the entry level of work involving the custody, security and supervision of adult inmates in food preparation and serving of meals at correctional institutions. Employees in this classification do not supervise other positions. Employees in this classification receive close supervision from a Correctional Dietary Supervisor or Correctional Dietary Services Supervisor. Employees are assigned to day, evening, night or rotating shifts.

Position duties include:

  • Train and supervise assigned inmates preparing vegetables, meats, salads, beverages and other foods.
  • Maintain sanitary kitchen conditions including supervision of the washing of pots, pans, dishes, counters and the cleaning of meat grinders and slicers and dining and kitchen areas.
  • Ensure that inmate workers adhere to Hazard Analysis Critical Control Point Regulations in food sanitation and food safety in an institutional setting.
  • Search inmates in order to prevent concealment of equipment, cutlery, food and other unauthorized items.
  • Maintain control and discipline of inmates working in kitchen and dining room areas while keeping a continual count.
  • Operate kitchen equipment and appliances such as mixers, cookers, ovens, stoves, toasters and coffee urns.
  • Measure and mix ingredients according to recipes.
  • Follow Division of Correction regulations, institutional directives and post orders.
  • Enforce rules of conduct among inmates and prepare reports of infractions.

Qualifications:

Education: Graduation from an accredited high school or possession of a high school equivalencycertificate acceptable to the Maryland State Board of Education as described in the Correctional Training Commission regulation.

Experience: None.

Note:The above educational requirement is set by the Maryland Correctional Training Commission in accordance with Correctional Services Article, Section 8-209, Annotated Code of Maryland.

Preference will be given to applicantswho possess the following preferred qualification(s).Include clear and specific information on your application regardingyour qualifications.

Training in a Culinary Program (this could be culinary training through a high school program or culinary school)

Special Requirements:

  • Selection standards for Correctional Officer certification are established by the Maryland Correctional Training Commission in accordance with Correctional Services Article, Section 8-209 of the Annotated Code of Maryland. These selection criteria are listed in detail in the Code of Maryland Regulations, Title 12, Subtitle 10, Chapter 01 and include the following:

U.S. Citizenship or Resident Alien status Must be at least 21 years of age A completed background investigation Oral interview Physical examination.

  • Employees in this classification are subject to call 24 hours a day and, therefore, will be required to provide the employing agency with a telephone number where they can be reached.
  • Employees in this classification are subject to substance abuse testing in accordance with Code of Maryland Regulations 17.04.09, Testing for Illegal Use of Drugs.
